KK\u00a0had earlier requested that we go out for dinner, but I wasn&#8217;t keen on that idea. I know KK\u00a0will eat pizza any time though.<\/p>\n<p>Normally we do proper yeast dough pizza, but that takes 50 minutes in the bread maker and then time for kneading and raising. I didn&#8217;t have that time, so I just googled a quick recipe.<\/p>\n<p>I was a little dubious of adding yeast when there was virtually no time for it to rise properly, but it turned out ok, judging from the amount that was eaten. I also followed the recipe and used white flour, and normally I would have a 60:40 split whole meal:white. [edit: I&#8217;ve now done it with the usual ratio and it worked out fine].<\/p>\n<p>I made one regular sized pizza for the adults using our pizza tray with holes in it, and improvised KK&#8217;s pizza on the back of a plain pizza tray. I had a fabulous idea of sliding it off onto the pizza stone to bake it, but it stuck, so I baked it a bit on the tray before scraping it off and letting it crisp on the stone. I did the same with the adult pizza.<\/p>\n<p>This is the perfect example of a frugal pizza. I had most of the ingredients just lurking in the pantry or fridge. There&#8217;s always a bottle of tomato paste in the fridge, and when combined with a sprinkle of oregano and basil it makes the perfect base. I also tossed on the last of a jar of black olives, some sliced ham I found in the freezer and the end of a pepperoni that was hidden in the back of the fridge. To add a bit of sweetness, I added frozen corn and some tinned pineapple. It wasn&#8217;t as flavourful as our normal pizza, but it filled hungry tummies.<\/p>\n<p><strong>The recipe<\/strong><br \/>\n1 tsp yeast<br \/>\n1 tsp white sugar<br \/>\n1 cup warm water<br \/>\n1 tsp salt<br \/>\n2 tbs olive oil<br \/>\n2-3 cups flour<\/p>\n<p>Mix yeast and sugar with warm water. Allow to sit while preparing other pizza ingredients. Then add all other ingredients, and mix in as much flour as needed to get to a dough-y state. Tip out, knead briefly until not sticky any more, then roll out and place on pizza trays.<\/p>\n<p>Add toppings, and then bake in the oven until brown (10-20 min), then slide off the tray and onto a pizza stone for 10 minutes to crisp the base.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>KK\u00a0and I were completely caught up in doing some DE stuff when we realised it was time for dinner.
